The Dining room is such a special experience, what is the inspiration behind the menu and how often does the menu change?
At Lindenderry, we aim to truly understand the desires of our customers and aspire to exceed expectation. Beyond serving incredible food, we want our diners experience from start to finish to be memorable and exceptional. The Dining Room has an immense focus on supporting local suppliers and farmers, such as Torello Farm and Red Hill Truffles, showcasing what this remarkable region of our country has to offer.
Executive Chef Tony Brazendale takes customers on a culinary journey that exhibits only the best produce of this region, working with ingreditent that sings at the time – which means we can adjust our menu almost daily if necessary. Providing an al a carte service, Tony likes to change the menu each season, building each dish around a familiar and favourite protein, but creating a lavish meal that provides a new experience with a hint of nostalgia. Tony believes that his menu draws small inspirations from his time training at Michelin restaurants in the UK but believes that what this region produces is what truly inspires him to create unforgettable food.
