‘The Hellenic House Project’ is an amazing new home opening in Highett on April 18. Curated by chef, George Calombaris, and supported by an incredible team of the next wave of hospitality superstars, the house will serve a delicious Greekinspired cuisine, in four unique spaces.
“The idea for The Hellenic House Project was hatched on a recent family holiday to Greece. Every time I visit Greece, I get fire in my belly to get back into hospitality to feed people’s souls again. I’ve always wanted a place where I can happily take my friends and family and call it home. Hence the name ‘The Hellenic House Project’.”
The Highett location has been transformed using the idea of a Greek home, paying homage to the spaces within. Downstairs at The Hellenic House Project is ’The Kitchen’ that will serve eat in or take away souvas, salads, chips, and cold cans of beer. Upstairs, ’The Good Room’ will seat around 50 and serve ‘spitiko’ cuisine, which is home style of Greek cuisine.
“What I love about Highett is that it has a truly local vibe, but also has wonderful growth happening in the area. There are some cool restaurants coming to Highett. Watch the Highett space…it feels like the Brunswick Street of Bayside.”
‘The Balcony’ will be an Aegean-style haven, a place to enjoy a drink and a tasty snack.
‘The Backyard’ will be a typical family entertainment area – a space where you can sit amongst the lemon and olive trees and enjoy a drink, a souva and something off the Sunday spit (just like home).
One of Australia’s most talented young chefs, Anthony Thalassinos, is at the helm of The Hellenic House Project kitchen. Anthony comes from a truly respectful culinary pedigree.
Beginning his career as an apprentice at a Melbourne institution, Grossi Florentino, he also worked at London’s One Star Michelin restaurant St John and more recently under Chef Matt Wilkinson at Montalto Winery on the Mornington Peninsula, and more recently working with George at Hotel Sorrento.
Leading the front of the house is the talented Federico Bianco, a proud past team member of George’s from The Press Club and Gazi. Fede knows more about the Hellenic heart than most, making people feel welcome, truly hospitable.
The Hellenic House Project is a casual dining experience. It’s a space that is inviting with no pretence, just delicious Greek food where people will happily come often and make their home.
