I sat down with Atlantic Group’s CEO Hatem Saleh to get a little glimpse into all the magic that goes into making this fantastic event happen – and talk all things races, festivities … and of course food!
Well, it’s one of the most exciting weeks on the Melbourne event calendar and no doubt an exciting time for The Atlantic Group! How would you describe the Melbourne Cup Carnival?
The Melbourne Cup Carnival is an event like no other – combining the very best in fashion, racing, and food.
This is our 9th Melbourne Cup Carnival with the Victoria Racing Club and we look forward to getting out on track each and every year. These four prestigious days offer an exceptional opportunity to network, entertain and soak up the excitement. The atmosphere, the outfits, and the action … it is simply unmissable!
As one of the largest caterers on track, we aim to complement the energy of the event. Within the venues we cater to, guests can look forward to innovative menus, stylish staff, instagrammable moments, flavourful food and an experience unlike any other.
What can you tell us about The Rose Room where you will be hosting guests this year? And will roses be featured?
The Rose Room is one of the most premium hospitality offerings on track. It is a multi-tiered marquee perched high above the action, just past the Winning Post. This venue is available to both VRC Members and Non-Members, with exclusive table bookings of 4, 8, 10 and 12 accepted. The Rose Room has superb views of the course and is the essence of glamour, style and elegance. This venue offers a spectacular degustation menu created and served by Atlantic Group.

Just like its name, The Rose Room is a fitting tribute to the lush and iconic gardens at Flemington. Year after year there is always a subtle nod to the rose. Stepping into the venue most definitely feels like Spring!
It wouldn’t be an Atlantic Group event without the most incredible menu – can you give us a little sneak-peek of what creations will be served on each of the days?
Each incredible menu has been tailored to enhance the raceday experience. Around the track we will be serving up a range of memorable menus consisting of everything from grazing, to the buffet, to sit down plated and degustation. Combining the very best in locally sourced and fresh produce, our menus are creative and made to go the distance – from the very first on arrival bite early in the day to the afternoon soak items.
Atlantic Group’s talented major event culinary team led by Trevor Knight, will provide everything from interactive food stations, fan favourites and nostalgic nibbles. There are lots of little surprises throughout the day, it really just depends on the location you are dining within. What I can tell you is that our menus are designed to fuel those raceday festivities!
How will each of the racing days differ, and what can we expect?
Each raceday offers guests an experience not to be missed but each day has its own vibe and traditions.
Derby Day – the traditional black and white outfits, the first official day of the Melbourne Cup Carnival and being a Saturday … screams ‘party’ to many attendees.
Cup Day – the iconic day for everyone’s bucket list, fantastic racing, star-studded, big celebrations and even bigger crowds.
Oaks Day (a.k.a Ladies Day) – starts a little later in the day which creates a slightly more relaxed atmosphere, stylish displays of colourful outfits and spectacular for socialising.
Stakes Day – family day, relaxed atmosphere, usually the day for some serious sunshine and fun.
From Atlantic Group’s perspective, our menus change to complement each day of racing. It is important that we offer something fresh to those clients and guests spending multiple racedays with us. As one example our Executive Pastry Chef, Lisa Van Zanten, is preparing a surprise for the senses for Rose Room guests – each day will reveal something new with a special play on perfect pairings.
